Ingredients
  

To cook the dal:

  • 1 cup tur dal or arhar dal or pigeon pea lentils
  • 1 tablespoon oil
  • Salt to taste

Turmarind pulp :

  • 1-2 tamarind

To make quick sambar recipe :

  • 2 tablespoons oil
  • ½ teaspoon Cumin seeds
  • ½ teaspoon Mustard seeds
  • 5-6 curry leaves
  • 2 onions
  • 1 brinjal [optional]
  • 7-8 pieces of drumstick
  • ½ cup Pumpkin chopped
  • 1 tomato
  • 2 tablespoons sambar masala
  • 1 teaspoon red chili powder
  • ¼ teaspoon Turmeric
  • Salt to taste

Instructions
 

Cook the dal for the recipe of sambar:

  • Wash tur dal 2-3 times with water and add it into the pressure cooker with 3 glasses of water.
  • Add salt to taste and 1 tablespoon of oil in it. Let it boil for 5 minutes. Now, close the lid and take 6 whistles on high flame.
  • When steam comes out automatically, open the lid and mash the dal with help of a ladle. Keep it aside.

Make Tamarind pulp:

  • Take tamarind in a small bowl, and add ½ cup of water to it. Let it soak for 15- 20 minutes.
  • After 15-20 minutes, remove the seed in the tamarind and mash it in water with help of your fingers. Separate the tamarind pulp using a strainer and keep it aside

How to make a quick sambar recipe:

  • Wash and pat dry all the vegetables. Cut onions, tomato, brinjal and pumpkin into large pieces. Cut the drumstick into medium-sized pieces and peel them.
  • Heat 2 tablespoons of oil in the pan. Add 1 teaspoon of cumin seeds, 1 teaspoon of mustard seeds and curry leaves in it.
  • Once mustard and cumin seeds start crackling, add chopped sambar vegetables in it except tomato. Also, add salt to taste.
  • Now, add ½ teaspoon of turmeric, red chili powder and ½ cup of water to cook the vegetables. Mix well. Cover and cook for 15 -20 minutes.
  • Once vegetables are cooked, add tomato to it. Mix well. Cover and cook for 1-2 minutes.
  • Now, add mashed dal to cooked vegetables and mix well.
  • Then, add tamarind pulp and 2 tablespoons of sambar masala to it. Mix and let it cook for 5 minutes. Check the consistency of the sambar and add ½ cup of water if needed.
  • Lastly, taste and check the salt in the sambar. Add the salt if required. Quick Hotel style sambar is ready to serve.
