Spicy Anda Bhurji [Egg Bhurji]

Heat oil and butter in a kadhai. Add cumin seeds, mustard seeds and a pinch of asafoetida [hing] to it.

Once cumin and mustard seeds start crackling, add chopped green chilies, garlic cloves and curry leaves to it.

Now, add chopped onions to it. Also, add salt and saute it until the onion becomes translucent.

Then, add chopped tomato to it. Mix and cook it until the tomato becomes mushy.

Once the tomato is cooked, add 1 teaspoon of red chili powder and 1/4th teaspoon of turmeric powder to it.

Mix and saute it for a minute on low-medium flam

Now break 5 eggs into it. You can also break the eggs in a bowl and then transfer them to the kadhai.

Mix it well and cook the egg burji by covering it on a low flame for 7-8 minutes.

Open the lid and mix it again. Serve the hot anda bhurji with chapati or pav.
