Dubuk wade is gram flour and spices dumpling dropped in a masala curry. To make this curry, an important step is to make masala. Masala is a ground paste of roasted onion, tomato and dry coconut.
Take 6 tablespoons of gram flour in a bowl. Add 1 teaspoon of red chili powder, ¼th teaspoon of turmeric, ½ teaspoon of salt and ½ teaspoon of carom seeds to it.
Mix it well by adding small parts of water. Make a dough-like mixture of it.
Masala for dubuk wade:
Heat 1 tablespoon of oil in a pan. Add onion slices to it. Saute for 5-7 minutes on medium flame.
Add garlic cloves slices and 2 tablespoons of grated coconut to it. Saute for 2-3 minutes.
Now add chopped tomato to it and saute for 2 minutes. Turn off the flame. Transfer it to a plate.
Let it cool. Transfer this roasted masala to a grinder jar. Grind it for a minute.
Add ½ cup of water to it and grind it again into a smooth paste.
Dubuk wade curry:
Heat 3-4 tablespoons of oil in the same pan. Add 2 teaspoons of red chili powder, 2 teaspoons of garam masala and ¼th teaspoon of turmeric to it. Saute for a minute. Don’t burn the spices.
Now add the ground masala to it and mix it well. Let it cook for 7-8 minutes on a medium flame by stirring occasionally.
Once the masala is cooked, it releases little oil. Now add 5 cups of water to it, and let it boil on high flame.
Once the water starts boiling, turn the flame to low and start dopping small wadas of the gram flour mixture.
Let dubuk wadas cook for 7-8 minutes.
Add chopped coriander to it. And serve dubuk wade curry with chapati or bhakri and rice.
