Take poha in a colander and wash under running water for a half minute. keep it aside for soaking for 5 minutes.
Now, add 1/2 tablespoon of turmeric and salt to taste in a soaked poha, and mix it gently.
heat 2 tablespoons of oil in a pan. Add peanuts to it and fry them for 1 minute. keep them aside.
In the same pan, add cumin seeds, mustard seeds, chopped onion, green chili, curry leaves and salt required for it. And mix well.
Once the onion turns pinkish in a colour. Also, curry leaves and chilies turn a little crispy. Add poha, fried peanuts and 1/2 teaspoon of sugar to it. Mix gently with help of a spatula.
cover it for a couple of minutes.
Now, add 1/2 tablespoon of lemon juice and a handful of chopped coriander in it. Mix well.
turn off the flame and serve hot poha for breakfast.
Notes
We can add a chopped potato with onion in poha to make batata pohe or potato poha.
