Vermicelli upma is a good and healthy Indian breakfast recipe. Upma made from rava/semolina is a very famous upma recipe. Vermicelli upma is one of the best variations of upma, which is made up of vermicelli.
Heat 1 tablespoon of oil in a pan and add vermicelli to it. Roast them on low flame until they turn light brown in a colour. You can also buy a packet of roasted vermicelli.
Transfer roasted vermicelli to a plate. Heat 2 tablespoons of oil in a pan.
Add peanuts and cashew slices to it.
Fry it for 1 minute. Add cumin seeds, chopped green chilies, chopped onion and salt to taste in it. Saute for 2 minutes.
Once the onion turns light pink, add chopped tomato and a ¼th teaspoon of turmeric to it. Mix well and cook it for a minute.
Now, add 2 cups of water to it. Let it boil on a high flame. Once the water starts boiling, turn the flame to low and add roasted vermicelli to it.
Add chopped coriander to it. Mix well and let it cook until the water gets absorbed by vermicelli.
Serve hot vermicelli upma.
