Veg pulao or vegetable pulav is an Indian rice recipe with aromatic spices. It is a simple, quick and tasty rice recipe. We can make veg pulao in a pot or pressure cooker. Making vegetable pulav in a cooker is quick, so I am using a cooker for this recipe. To make vegetable pulav, we have to sauté vegetables with spices. And then we have to add basmati rice and water to it.
Heat 2 tablespoons of ghee in a pressure cooker. Once ghee melted add 1 teaspoon of cumin seeds, 6-7 cashews, 2 green cardamom, 5 cloves, 5 peppercorns and cinnamon to it.
Sauté all the whole spices for 2-3 minutes. Then add a tablespoon of crushed garlic and 1 large chopped onion to it. Sauté it until the onion becomes translucent.
Now, add 3 chopped chilies, 1/2 cup of cauliflower, 1/2 cup of capsicum, 1/2 cup of peas, 1/2 cup of carrot and potato to it. Also, add salt and sauté the vegetables for 3-4 minutes on medium flame.
Then, take 3/4 cup of basmati rice in a colander. Wash it under running water and add it to a pressure cooker. Mix well and sauté it for a minute.
Add 1&1/2 cup of water to it and mix well. Once the water starts boiling, close the lid and take 3 whistles on a high flame.
Once the steam comes out automatically, open the pressure cooker and serve homemade veg pulav with cucumber salad.
