Stuffing Remove upper leaves of cabbage, wash and chop the cabbage finely.
Add 7 large garlic cloves and half-inch ginger in a grinder jar. Grind it in a smooth paste.
Heat 2 tablespoons of oil in a pan. Add cumin seeds and mustard seeds to it. Once it starts crackling, add ginger garlic paste to it.
Cook it for a minute. Now add cabbage to it and mix well.
Add 1 teaspoon of red chili powder, half teaspoon of turmeric powder and salt to taste. Mix well.
Cook it for 5 minutes on low flame.
Stuffing is ready for cabbage paratha. Transfer it to a bowl.
Dough Take 1 ½ cup of wheat flour in a bowl. Add salt to taste in it.
Start kneading the dough by adding small parts of water.
Now add 1 tablespoon of oil to it and knead again.
Keep it aside for 10- 15 minutes.
Rolling the paratha After 10 – 15 minutes, make small balls or parts of dough.
Take one part or ball of dough, dust it in wheat flour and start rolling. Roll it in a circle around 3 cm in radius.
Add 1 tablespoon of stuffing to it. Adding too much stuffing makes rolling of paratha difficult.
Now start pleating all the edges and join them.
Press the dough filled with stuffing gently as shown in the picture.
Dust it with flour and roll the paratha.
Heat a pan. Transfer the paratha to a pan.
Cook it on a medium flame from both sides by flipping the paratha.
Now spread some ghee on paratha from both sides and cook it for few seconds.
Serve the cabbage paratha with tomato ketchup or sweet curd.
You can add finely chopped onions in a stuffing with cabbage to make cabbage onion paratha.
I usually make stuffed cabbage paratha, but we can mix cabbage stuffing with wheat flour while kneading.[Cabbage paratha without stuffing ]
