Egg-fried rice is a Chinese dish that is easy and fulfilling. Homemade egg fried rice is a satisfying dinner idea. To make egg-fried rice, we need to stir-fry veggies and rice in soy sauce with scrambled eggs. Spring onion is one of the important ingredients to achieve perfect fried rice recipes. Adding vegetables to fried rice makes it healthier. Veggies and their quantity may vary according to your choice.
To make perfect egg fried rice, use a day-old rice or leftover rice. Freshly cooked rice is hot and a little sticky. If you want to make fried rice with freshly cooked rice, then allow the cooked rice to cool down and keep it in a refrigerator for an hour before making fried rice.

Easy Egg Fried Rice
Ingredients
- 1 cup rice
- 1 tablespoon ginger-garlic paste
- 3 eggs
- 1 cup chopped cabbage
- 1 chopped onion [large]
- 3/4 cup chopped capsicum
- 3/4 cup chopped spring onion
- 2 green chilies
- 3 tablespoons soy sauce
- Salt to taste
Instructions
Cooking Rice:
- Leftover rice is preferred for making fried rice, which is not hot and non-sticky. If you are making rice on the same day, follow the below process.
- Heat 3 cups of water in a pot. Wash one cup of rice twice and add it to hot water. Also, add salt to it and mix well.
- Let it boil for 15-20 minutes on medium flame or until the rice is eighty percent cooked. Then transfer it to the strainer and strain it. Let it cool completely. You can also keep it in a refrigerator for an hour before making fried rice.
Preparing Eggs:
- Start with cracking 3 eggs in a bowl. Add a little salt to it and beat them well.
- Now, heat 2 tablespoons of oil in a pan or kadai. Pour egg mixture into it.
- Cook and scramble them on medium flame.
- Once cooked, transfer them to a plate.
Sautéing Veggies:
- Now heat 2 tablespoons of oil in the same kadai. Add ginger-garlic paste and sauté it for a minute.
- Add chopped onion to it and sauté it until onion becomes translucent.
- Now add chopped cabbage, green chilies and capsicum to it. Sauté it on medium-high flame until veggies become tender. Add salt required for sautéing vegetables here.
- Once veggies are ready, add 3 tablespoons of soy sauce to it and mix it well. You can also add schezwan chutney here to add more flavors.
- Now add chopped spring onions and sauté it for a minute. Keep 2-3 tablespoons of chopped spring onion aside to add in the last step.
Making Egg Fried Rice:
- Add cooked rice to sautéed veggies and give it a good mix.
- Now, add 2 tablespoons of chopped spring onion and scrambled eggs prepared in previous steps.
- Mix it well and serve hot homemade egg fried rice. Pair it with Tomato Soup and French Fries to complete a meal.
