Cucumber and beet salad is a very easy and quick recipe. The portion of salad in lunch or dinner completes the meal. It is a very tasty and healthy recipe. We can make it in minutes with few ingredients.
This simple salad recipe contains raw cucumber, beetroot and pomegranate with curd. Cucumbers are low in calories and a strong antioxidant, also they promote hydration. Beetroot is a good source of fibers and some important nutrients. Pomegranates are also a strong antioxidant.
You can serve salad with lunch or dinner, also in breakfast or for evening cravings. Salad can be store in a fridge for a day. In this recipe, I chopped beetroot in and cucumber in small pieces using a chopper, but you can grate the cucumber and beetroot. We can also add finely chopped fresh carrots to this salad recipe.

- 2 cucumbers [small]
- 1 beetroot [medium]
- 1 pomegranate [small]
- 2 tablespoons sugar
- ¼ teaspoon salt
- ½ cup curd
Instructions
- Peel cucumbers and beetroot. Chop it into small pieces using a knife or chopper. Transfer it to a large bowl.
- Cut the pomegranate into 4 parts and separate pomegranate seeds with fingers. Add it to the same bowl.
- Add 2 tablespoons of sugar and ¼ teaspoon of salt to it. Mix well.
- Add 2 tablespoons of fresh curd to it. Mix it well.
- Serve the healthy cucumber-beetroot salad.
