Egg Lababdar

Egg labadar is an easy and quick egg recipe, which can be prepared in minutes. We have to cook eggs in the spiced gravy to prepare this dish. We can serve egg lababdar with chapati or roti or naan and rice.

Ingredients
  

  • 5 tablespoons oil
  • ½ teaspoon cumin seeds
  • 1 bay leaf
  • 4 eggs
  • 3 onions
  • 3 tomato [small sized]
  • 7-8 cashews
  • 2 ½ teaspoon red chilli powder
  • 1 tespoon garam masala
  • 1 teaspoon chiken masala
  • ¼ teaspoon of turmeric
  • Salt to taste
  • Handful of coriander leaves

Instructions
 

  • Heat around 4-5 tablespoons of oil in a kadai. Add half a teaspoon of cumin seeds and a bay leaf to it. Saute it for a minute.
  • Now, add finely chopped onions to it. Add a little salt and saute it until the onion becomes translucent. Adding salt while sauteing onions, makes it cook quickly.
  • Meanwhile, add 3 roughly chopped tomatoes and 7-8 cashews in a grinder jar.
  • Grind it into a smooth paste by adding a little water.
  • Once onions are cooked add 2 & 1/2 teaspoon of red chilli powder, 1 teaspoon of garam masala, 1 teaspoon of chiken masala, 1/4 teaspoon of turmeric powder to it.
  • You can adjust the amount of spices according to your choice. Saute all the spices for a couple of minutes.
  • Now add tomato and cashew paste to it. Cover and cook it for 7-8 minutes by stirring occasionally.
  • Add around 1 & 1/2 cup of hot water to it . Mix and cover it for couple of minutes.
  • Then, add finely chopped coriander leaves and salt as per taste to it.
  • Mix it well. Break the eggs on cooked masala curry as shown below. You can break the egg in a bowl and add it to a curry one by one. Sprinkle some salt on it. Cover and cook it for 7-8 minutes on low flame.
  • After around 8 minutes, check the egg are cooked or not by inserting a knife in it. If the knife comes out clean easily then eggs are cooked.
  • Lastly, garnish it with chopped coriander and serve hot egg lababdar with soft chapati or paratha.
