Heat 2 tablespoons of oil in a pan. Add 1 teaspoon of mustard seeds, 1 teaspoon of cumin seeds and curry leaves to it.
Once cumin and mustard seeds start crackling, add 1 teaspoon of crushed garlic and finely chopped onion to it.
Saute it until the onion becomes translucent. Then add chopped tomato to it.
Mix it well and cook until the tomato becomes mushy. Then add 2 teaspoons of red chili powder, 1 teaspoon of garam masala, 1 teaspoon of magic masala and 1 teaspoon of crushed kasuri methi to it.
Mix it well. And saute it for a couple of minutes on low flame.
Then add 2 tablespoons of thick and fresh curd to it.
Combine it well. Then add chopped cauliflower to it. To clean the cauliflower properly boil it in water for a couple of minutes before using.
Add 2 cups of water and salt to it and cook it by covering it with a lid for 8-10 minutes or until the cauliflower becomes soft.
Finally add chopped coriander leaves and mix it well.
Turn off the flame. And, serve hot cauliflower curry with soft roti and rice.
