Heat 2 tablespoons of oil in a pan. add 1 teaspoon of mustard seeds and 1 teaspoon of cumin seeds to it.
Once they start crackling, add 2 teaspoons of finely chopped garlic and chopped onion to it.
Saute it until the onion becomes translucent. Then add chopped tomato to it.
Mix it well and cook it until the tomato becomes mushy. Then add 2 teaspoons of red chili powder, 1 teaspoon of garam masala, 1/4 teaspoon of turmeric powder and 1 teaspoon of chicken masala or any other masala of your choice into it.
Mix it well and saute it for a minute. Also, add 3-4 cashew pieces to it.
Then add chopped cauliflower to it. Sauté it for 2-3 minutes on medium flame. To clean the cauliflower properly boil it in water for a couple of minutes before using.
Wash the basmati rice under running water and add it to a pan. Mix well.
Now add 3 cups of hot water and salt to it and mix well.
Also, add chopped coriander leaves and cook the cauliflower rice on low flame until the water gets absorbed.
Turn off the flame and serve hot cauliflower pulav with cucumber-beetroot salad.
