Add half a cup of corn kernels into a grinder jar. Grind it into a smooth paste and set aside.
Now, heat a tablespoon of oil in a pan. Add 1 teaspoon of crushed garlic cloves, half a cup of corn kernels and half a cup of chopped carrot into it.
Saute it until the vegetables become tender, it takes 4-5 minutes on medium flame. You can add more vegetables of your choice.
Now, add ground corn kernels into it and mix well. Cook it for a couple of minutes by stirring occasionally.
Now add around 3 cups of water and salt to taste into it. Let it boil.
Make a thick paste of a tablespoon of cornstarch by adding a little water into a small bowl.
Once the soup starts boiling add the cornstarch paste into it slowly by stirring occasionally.
Let it cook for 2-3 minutes then turn off the flame. Corn soup becomes slightly thick here.
Now, serve the hot homemade corn soup by garnishing it with coriander leaves or spring onion.
