Instructions
Wash and soak ¼ cup of rice for around 20 minutes.
Then transfer it to a grinder jar and grind it into a smooth paste by adding a little water.
Meanwhile, pour 4 cups of milk into a heavy bottom pot and boil it.
Once the milk comes to a boil, turn the flame to low and add ground rice paste to it by stirring occasionally.
Cook it for 15-20 minutes on low flame by stirring it occasionally to avoid rice sticking to the bottom of the pan.
Now add half a cup of sugar into it and mix it until the sugar dissolves. Cook until it thickens to the desired consistency.
Lastly, add dry fruit slices and saffron strands into it. Mix it and turn off the flame. Rice kheer thickens with time, so do not make it too thick.
Garnish the delicious rice kheer with dry fruits and serve it. You can also refrigerate it for a couple of hours before serving.
