Sheera is a famous Indian sweet dish. Sheera is made up of roasted rava or suji or sooji. To make Sheera, we have to roast it in ghee. Followed by adding sugar and warm milk to it. We can make suji ka halwa with milk or water or a combination of milk and water. Also, we can replace sugar with jaggery powder.
Start with adding 2-3 tablespoons of ghee in a hot pan. Also, add a cup of rava [semolina] to it and roast it on low flame by continuous stirring. Make sure that rava does not get burned or turn dark brown it may give a burnt taste and smell to the recipe. It takes around 5-7 minutes to roast the rava uniformly.
Now add almond and cashew slices to it. Also add resins. While roasting rava, heat the milk on another stove. You can replace milk with hot water here or we can also use 2 cups of warm milk and 2 cups of hot water.
Once rava is roasted properly add warm milk to it slowly. Stir continuously to avoid any lumps.
Slowly the consistency of the sheera becomes thick. At this point add sugar to it and mix it well.
After adding sugar, the consistency of the sheera becomes slightly thin. Mix it continuously until the sugar combines in the rava completely and the consistency of it becomes thick again.
