Wash surmai fish pieces properly under running water.
For masala coating, take half a tablespoon of crushed garlic, half a tablespoon of crushed ginger, 2 teaspoons of red chili powder and 1 teaspoon of garam masala in a small bowl.
Add salt as required and 3 tablespoons of oil to it. Mix it well.
Coat a thick layer of this masala mixture to seer fish from both sides and edges as well. Keep it aside.
Now, take 2 tablespoons of rava[semolina], 2 tablespoons of rice flour and 1 teaspoon of red chili powder to a wide plate. Add a little salt to it and mix it well.
Transfer the piece of fish to the plate of flour mixture and coat it properly from both sides. Press it gently while coating.
Heat the oil in a pan for shallow frying the fish. Transfer the suji-coated fish to the oil.
Shallow fry it on medium flame from both sides until it turns golden brown and a little crisp.
Transfer the fried seer fish to kitchen paper to soak excess oil. Fry all the pieces as above.
Garnish it with finely chopped coriander and serve hot surmai fry [seer fry].
