Uttapam recipe

Uttapam is a famous south Indian dish. It is the best breakfast item. Uttapam is made up of dosa batter. It is nothing but a thick dosa with toppings.

Ingredients
  

  • 1 cup rice
  • ½ cup urad dal
  • ¼ teaspoon methi seeds [4-5 methi seeds]
  • Green chili
  • Onion
  • Tomato
  • Coriander
  • Salt
  • oil

Instructions
 

Uttapam batter:

  • Take rice and methi seeds in a bowl. Wash it 2-3 times and soak it in water for 8-10 hours or a whole day.
  • In another bowl, take urad dal, wash it 2-3 times with water and soak for 8-10 hours or a whole day
  • After soaking, drain the water from rice and dal.
  • Add rice and methi seeds in a grinder jar with ¼ cup of water. Grind it in a smooth paste and transfer it to a large bowl.
  • Add dal in a grinder jar with little water and grind it in a smooth paste. Transfer it to the same bowl.
  • Mix ground dal and rice with the ladle and let it ferment for 8 hours (overnight).
  • After fermentation Batter will increase in volume. Mix it well with a ladle.
  • Take the required batter in a separate bowl. Add salt and water to it for pourable consistency. Mix well. 
  • Store the remaining batter in the fridge

Toppings :

  • Chop green chili, tomato, onion and coriander, for toppings on uttapam.
  • Add salt to taste on toppings and mix well. 

Making uttapam (How to make uttapam) :

  • Heat the pan and spread 1 tablespoon of oil on it.
  • Add a ladle full of batter on the pan. Do not spread the batter on the pan, keep it thick.
  • Add finely chopped green chili on uttapam.
  • Now add chopped onion on it.
  • Add finely chopped tomato on uttapam. Adding excess tomato may break the uttapam.
  • Now add finely chopped coriander on it.
  • Add little oil around the uttapam edges. Let it cook till the base turns golden.
  • Flip the uttapam and cook the added toppings side by adding little oil on the edges of uttapam.
  • Now flip and serve the uttapam with sambar and coconut chutney.

Notes

  1. You can skip green chili, tomato and coriander from toppings. And make onion uttapam with only onion in toppings.
