Homemade Sweet Corn Soup

Sweet corn soup is one of the creamy and comforting soup recipes. This is the perfect recipe to make for a light dinner. We can use fresh or frozen corn kernels to make this recipe.

Ingredients
  

  • 1 cup corn kernels
  • 1 teaspoon crushed garlic
  • ½ cup chopped carrot
  • 1 tablespoon cornstarch / all-purpose flour
  • 1 tablespoon oil
  • Salt to taste

Instructions
 

  • Add half a cup of corn kernels into a grinder jar. Grind it into a smooth paste and set aside.
  • Now, heat a tablespoon of oil in a pan. Add 1 teaspoon of crushed garlic cloves, half a cup of corn kernels and half a cup of chopped carrot into it.
  • Saute it until the vegetables become tender, it takes 4-5 minutes on medium flame. You can add more vegetables of your choice.
  • Now, add ground corn kernels into it and mix well. Cook it for a couple of minutes by stirring occasionally.
  • Now add around 3 cups of water and salt to taste into it. Let it boil.
  • Make a thick paste of a tablespoon of cornstarch by adding a little water into a small bowl.
  • Once the soup starts boiling add the cornstarch paste into it slowly by stirring occasionally.
  • Let it cook for 2-3 minutes then turn off the flame. Corn soup becomes slightly thick here.
  • Now, serve the hot homemade corn soup by garnishing it with coriander leaves or spring onion.
