Veg pulao or vegetable pulav is an Indian rice recipe with aromatic spices. It is a simple, quick and tasty rice recipe. We can make veg pulao in a pot or pressure cooker. Making vegetable pulav in a cooker is quick, so I am using a cooker for this recipe. To make vegetable pulav, we have to sauté vegetables with spices. And then we have to add basmati rice and water to it.
We can use different vegetables for making veg pulao. I am using cauliflower, capsicum, peas, potato and carrot for this recipe. Also, sautéing spices until their aroma absorbs in the recipe is important. We are using green cardamom, cinnamon, cloves, and peppercorns in spices, also add bay leaf and star anise if available. Also, we are using green chilies to add some spice.

Veg Pulao
Ingredients
- 3/4 cup basmati rice
- 1 tablespoon crushed garlic
- 1 large chopped onion
- 1/2 cup cauliflower
- 1/2 cup capsicum
- 1/2 cup peas
- 1/2 cup carrot
- 3 green chilis
- 1 potato
- 2 tablespoons ghee
- 1 teaspoon cumin seeds
- 6-7 cashews
- 2 green cardamom
- 5 cloves
- 5 peppercorns
- 2 large pieces cinnamon
- Salt to taste
Instructions
- Heat 2 tablespoons of ghee in a pressure cooker. Once ghee melted add 1 teaspoon of cumin seeds, 6-7 cashews, 2 green cardamom, 5 cloves, 5 peppercorns and cinnamon to it.
- Sauté all the whole spices for 2-3 minutes. Then add a tablespoon of crushed garlic and 1 large chopped onion to it. Sauté it until the onion becomes translucent.
- Now, add 3 chopped chilies, 1/2 cup of cauliflower, 1/2 cup of capsicum, 1/2 cup of peas, 1/2 cup of carrot and potato to it. Also, add salt and sauté the vegetables for 3-4 minutes on medium flame.
- Then, take 3/4 cup of basmati rice in a colander. Wash it under running water and add it to a pressure cooker. Mix well and sauté it for a minute.
- Add 1&1/2 cup of water to it and mix well. Once the water starts boiling, close the lid and take 3 whistles on a high flame.
- Once the steam comes out automatically, open the pressure cooker and serve homemade veg pulav with cucumber salad.
How To Make Vegetable Pulao At Home:
