Egg bhurji or anda bhurji is an Indian recipe for spicy scrambled eggs. Spicy egg bhurji served with chapati or pav is one of the quick and tasty meals. Bhurji pav is a very famous Indian street food. You can find anda bhurji in every corner of Mumbai. Mostly egg bhurji is spicy and served with pav in Mumbai. To make tasty street style anda bhurji, we have to add butter while making tempering for it. And using more onion and sautéing it properly with spices is the key to making street style anda bhurji.
Anda bhurji with bhakri or chapati is an easy and tasty dinner. To make egg bhurji, we have to sauté onion and tomato with spices. Then crack the eggs in it and cook it properly. We can serve egg bhurji with Chapati, jawar roti, bajra roti, rice roti or pav.

Egg Bhurji | Anda Bhurji
Ingredients
- 5 eggs
- 2 onions
- 1 tomato
- 3-4 garlic cloves
- 2 green chilies
- 1 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- pinch of asafoetida [hing]
- 4-5 curry leaves
- 2 tablespoons oil
- salt to taste
Instructions
- Start by chopping 2 onions, 1 tomato, 3-4 garlic cloves and 2 green chilies.
- Heat 2 tablespoons of oil in a kadhai. Add 1 teaspoon of cumin seeds, 1 teaspoon of mustard seeds and a pinch of asafoetida [hing] to it.
- Once cumin and mustard seeds start crackling, add chopped green chilies, garlic cloves and curry leaves to it. Saute it for a couple of minutes.
- Now, add chopped onions to it. Also, add salt and saute it until the onion becomes translucent.
- Then, add chopped tomato to it. Mix and cook it until the tomato becomes mushy.
- Once the tomato is cooked, add 1 teaspoon of red chili powder and 1/4th teaspoon of turmeric powder to it.
- Mix and saute it for a minute on low-medium flame.
- Now break 5 eggs into it. You can also break the eggs in a bowl and then transfer them to the kadhai.
- Mix it well and cook the egg burji by covering it on a low flame for 7-8 minutes.
- Open the lid and mix it again. Serve the hot anda bhurji with chapati or pav.
How To Make Street-style Anda Bhurji:

10. Open the lid and mix it again. Serve the hot anda bhurji with chapati or pav.
