Kadhi is my all-time favorite recipe. As it is an easy and quick Indian recipe. I pair it with different pakoras like onion pakora, crispy corn pakoda or bread pakora. Kadhi is the best meal for busy winter nights. Besan kadhi is made up of a mixture of curd and gram flour. I prefer to add a little sugar to make a tasty combo of spicy chilies and sugar sweetness.
Making a kadhi recipe is very easy. To make it perfect we have to follow some tips. Like, while pouring the besan and curd mixture, the flame should be low. And tadka [sauting chilies] should be perfect. Also, adding a small amount of sweetener like sugar or jaggery powder increases the taste of the dish. And, adding pure ghee at last in the kadhi makes it more flavourful.
Kadhi Recipe
Ingredients
- 8 tablespoons curd
- 2 tablespoons gram flour
- ½ tablespoon sugar
- ½ teaspoon turmeric powder
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- ½ teaspoon of mustard seeds
- pinch of asafoetida [hing]
- 4-5 curry leaves
- 4 garlic cloves
- 4-5 green chilies
- 1 tablespoon ghee
- salt to taste
Instructions
- Take 8 tablespoons of curd in a bowl. Add 2 tablespoons of gram flour, half a tablespoon of sugar, 1/2 teaspoon of turmeric powder and salt to it.
- Mix it well. There should be no lumps in this mixture. 237 3. Add 1 cup of water and mix it again.
- Now, Heat 2 tablespoons of oil in a kadai. Add 1 teaspoon of cumin seeds, 1/2 teaspoon of mustard seeds and a pinch of asafoetida [hing] to it.
- Once cumin and mustard seeds start crackling, add curry leaves, finely chopped garlic cloves and green chilies to it. Saute it for a couple of minutes.
- Now, pour the curd and besan [gram flour] mixture into it. Also, add 1 & 1/2 cups of water and mix it well.
- Cook it for 5-7 minutes by stirring occasionally. Add 1 tablespoon of ghee to it. Also, taste and add salt if required.
- Finally add finely chopped coriander leaves. Turn off the flame and Serve hot kadhi with jeera rice and bread pakoda.
