For making dosa, we need to soak and grind the dal and rice. And then fermentation is required. The fermentation process for dosa batter normally takes 8 hours, but in winter or in cold regions it takes 10-12 hours.

Ingredients
  

  • 1 cup rice
  • 1/2 cup urad dal
  • 4-5 methi seeds [1⁄4 teaspoon]
  • Salt to taste
  • Oil

Soaking

  • Take rice and methi seeds in a bowl. Wash it 2-3 times and soak in water for 8-10 hours or for a whole day.
  • In another bowl, take urad dal, wash it 2-3 times with water and soak for 8-10 hours or for a whole day.

How to make batter for dosa

  • Drain water from rice and dal.
  • Add rice and methi seeds in a grinder jar with 1⁄4 cup of water. Grind it in a smooth paste and transfer it to a large bowl.
  • Add dal in a grinder jar with little water and grind it in a smooth paste. Transfer it to the same bowl.
  • Mix ground dal and rice with a ladle and let it ferment for 8 hours (overnight).
  • After fermentation batter will increase in volume.
  • Add salt and water according to requirement. Mix well.
  • Store the remaining batter in the fridge.

Making dosa

  • Heat the pan. Turn flame to low and add 1 tablespoon of oil to the pan.
  • Pour a ladle full of dosa batter on the pan and spread it using ladle quickly.
  • Cook dosa on medium flame, add little oil around the dosa edges and on the dosa.
  • Once the base of the dosa turns in golden, dosa is ready. No need to flip the dosa.
  • Serve hot dosa with coconut chutney or sambar.

Notes

1. Bowl for fermentation should be large enough, as the batter will increase in volume after fermentation.
2. For smooth and fine batter grind the rice and dal in small portions.
3. Fermentation process takes 8 hours in summer and 10-12 hours in winter.
