The word appe means cooked in a mold. It is referring to the appe pan or appe mold required to make a recipe of appe. Appe pan has several round-shaped molds which help to cook appam uniformly. 

Appe pan is available in different sizes. I have an appe pan with 12 molds, so I can make more appam in less time. Appe pan is also available in 3 and 6 molds.

  • 1 cup Idli batter [large]
  • 1 Onion
  • 2-3 Green chilies
  • Handful of coriander
  • Pinch of baking soda
  • Salt to taste

Paniyaram Batter Recipe | Appe Batter Recipe:

  • As appe are prepared by using idli batter. The first step to make perfect appe is to prepare perfect idli batter. To make idli batter we have to soak urad dal and rice separately. And then ground them in a smooth paste. After that fermentation process is required. Make idli batter by our step-by-step guide with pictures of idli recipe.
  • To make an instant appe recipe, take 1 large cup of idli batter in a bowl. Add finely chopped onion, green chilies, salt to taste and coriander to it.
  • Mix it well. Now add a pinch of baking soda to it. Give it a good mix. We can replace baking soda with half tablespoon of eno.

How To Make Appe Recipe:

  • Heat the appe pan. Turn the flame to low and add little oil to each mold.
  • Now add paniyaram batter to each mold with the help of a spoon. Fill batter upto ¾th of mold only, as appe will increase in size once they are cooked.
  • After 2-3 minutes, the bottom of the appam turns crispy and golden. Flip the appe one by one. And cook from another side as well.
  • Serve the hot and crispy masala appam with coconut chutney or sambar.
